However in the DHCP settings for my device (the Huawei HG8245H) the fields for Primary DNS Server and Secondary DNS Server are disabled (greyed out) and I'm unable to enter anything in them.

This ended up routing the DNS through the router and allowed me to reach domains and not just IPs. So it turns out it wasn't a setting on the router as much as it was a setting on the devices connecting to the router.
